What happens when you forget to take your snack with you to work? -Right, you start to think about meals like dinner. What could we possibly eat which is comforting but not too heavy since the weather is nice today…

Today we came up with a simple but hearty salad: crunchy Romano and iceberg lettuce with smoked salmon, cucumber, fried green asparagus, real Feta cheese (the one which is made from goat- and sheep milk), broccoli and thinly sliced radishes.

But then it was warm and they had strawberries on a special offer… We have had strawberries and ice cream already which is always nice, but today we were more like wanting a piece of cake.

In Germany you often eat Tortenboden, a kind of sponge cake, with fruits like fresh strawberries. Exactly what we wanted.

First step the sponge cake. For this one I always rely on my mums recipe (thanks!): 3 eggs, 6 tbsp sugar, 6 tbsp oil, 6 tbsp flour, 1 tsp baking powder, a pinch of salt and depending on my mood a pinch of vanilla or some lemon zest. Mix it all, pour it in a breaded pan and bake it for 15-20 min at 190C in a preheated oven. That’s it. Always perfect, always delicious…well, as long as you don’t fuck up the topping. 😎

Second step: Topping! You can go plain or whipped cream or whipped cream with a bit of sour cream or as I prepared it tonight: a fresh cooked vanilla pudding mixed with whipped cream.

Third step: Fruits. Today fresh strawberries.

Btw the landscaping is almost done. It’s green now. Ecky took his first rolls already.
